The best way to make dinner is to enjoy making it.
One of my favorite parts of making dinner is talking to my husband and kids about their day as I cook so having a easy recipe helps me get quality family time in as I'm cooking a delicious meal. Here are the ingredients, I really hope you and your family enjoy this meal as much as mine and I do.
- Half organic chicken
- Two large sweet oranges
- Four table spoons water
- Pack organic frozen mix veggies
- Two table spoons butter
- Two cups of cooked rice (any choice)
- One table spoon Vida's Spices MaMa Africa seasoning (SHOP Now) or buy local at Rhino Market
- One table spoon Vida's Spices Earthly Blend seasoning (SHOP Now) or buy local at Rhino Market
Total Cook Time: 1 hour
Serves: 4 to 6 people
Turn oven on to 425
Cut one orange into half and In a small bowl, squeeze to create orange juice.
Add two table spoons of water to the juice, one table spoon of Mama Africa season blend and mix well.
Place half chicken in a large bowl and rub the orange juice mix evenly all through the chicken. Lift up chicken skin and rub the mix in there as well.
Cut the other orange into four pieces and on a sheet pan, place oranges and chicken laying skin up.
Cover with aluminum foil and bake for 45 minutes until the chicken reads 165 degrees in the breast.
Take out oven, uncover and broil on mid-high for 10 minutes or until skin is golden brown. (stay close and watch carefully before it burns).
Remove chicken from oven and let it cool down before cutting.
While Chicken bake, cook veggies and rice.
Turn stove on to mid-high
In a small soup pot, add mix-veggie, 2 table spoons of water, 1 table spoon of Earthly Blend Seasoning, stir well, cover and place on stove.
Cook for 7 to 10 minutes, add butter stir and take off heat.
Let veggies sit for about 5 minutes then add rice to the veggie pot. if rice is dried, add 1 to 2 table spoons of water, cover and let it sit for 3 to 5 minutes before serving.
Eating together out of one dish helps tighten our bond .
