Roasted Zucchini with Vegan Cheese

You don't have to be vegan to eat vegan foods




I think some of the best ways to enjoy our earth is to enjoy all the foods that are put on it. I am one of the biggest fans of eating Vegan Foods because well, it's food. Here is a recipe to one of my family's and I favorite vegan foods.





INGREDIENTS:


- 5 small Zucchini sliced into bite size

- 1 table spoon Vida's Spices Earthly Blend Seasoning Blend (Buy Now) or locally

at Rhino Market

- 1/2 cup Daiya vegan cheese Classic Blend sold at Earth Fare

- 2 Tablespoon olive oil


Total Cook Time: 20 minutes

Serves: 2 to 4 people ( Great idea to add a side of brown butter rice).




Vida's Spices Earthly Blend Seasoning (Shop Now)





Direction:


Turn oven to 375


In a large bowl, add all ingredients Not Cheese.

Mix ingredients well and spread in a baking pan.


Roast for 20 minutes or until veggie appeared cooked then pull out of oven and let it sit for 5 mins.


Add desired amount of cheese evenly all over zucchini and broil.

For melted cheese with out crust on top, broil on Medium

For melted cheese with crust on top, broil on Mid-High but keep a very close watch so it doesn't burn.


Let veggies completely cool off before serving.











Un-Vegan This Recipe:


INGREDIENTS:

- 5 small Zucchini sliced into bite size

- 1 table spoon Vida's Spices Earthly Blend Seasoning Blend (Buy Now) or locally

at Rhino Market

- 1/2 cup Mozzarella cheese and 1/2 cup Parmesan cheese ( mix both cheese together before topping zucchini)

- 2 Tablespoon olive oil


Total Cook Time: 20 minutes

Serves: 2 to 4 people ( Great idea to add a side of brown butter rice).

Serves: 4 people
